Umami Mushroom Beef Burger

Ingredients

  • 8 oz mushrooms
  • 2 T olive oil
  • 1 t sea salt, divided
  • 1 lb lean ground beef
  • 1 t garlic powder
  • 1 t Italian seasoning
  • 1 t paprika
  • ½ t black pepper
  • ½ t onion powder
  • 1 large egg
  • ¼ c breadcrumbs
  • Oil for cooking
  • 4 hamburger buns

Directions

  1. Clean mushrooms and chop them very finely.
  2. Place a large skillet over medium-high heat and add the oil. Once the oil is hot, add the mushrooms to the skillet and season with ½ teaspoon salt. Cook until the mushrooms are soft and most of the moisture has cooked off, about 3–5 minutes. Pull off the heat and let them cool slightly.
  3. Once the mushrooms have had a chance to cool a bit, toss them in a large bowl along with the beef, remaining salt, garlic powder, Italian seasoning, paprika, pepper, onion powder, egg, and breadcrumbs.
  4. Using clean hands or a spoon, mix until well combined and the ingredients are evenly distributed throughout the meat.
  5. Divide the meat mixture into 4 equal portions and form into patties that are 1-inch thick.
  6. If you want to grill these burgers, use your thumbs to create a small indentation in the top of the burger to prevent them from puffing up too much while cooking.
  7. Heat a large skillet over medium-high heat and add cooking oil. Once the oil is hot, carefully place the burgers in the pan and cook for about 5 minutes on each side and until your preferred doneness.
  8. If grilling, cook burgers on a medium-high grill for about 5 minutes per side.
  9. Serve on buns and top with your favorite burger toppings.
