Thai Coconut Soup

Ingredients

  • 2 lbs udon noodles
  • 1½ c coconut milk
  • 2½ c broth
  • 2 stalks lemongrass
  • 3–4 makrut lime leaves OR ¼ t lime zest
  • 8 oz fresh mushrooms, chopped
  • 3–4 Thai chilis (or sriracha)
  • ¼ t salt
  • ¼ c lime juice
  • ⅓ c thin coins of fresh galangal

Notes

  • Freeze into individual portions before adding noodles. Save for winter when you're sick — the coconut milk and ginger are amazing for recovery.
