Thai Coconut Soup

Ingredients
- 2 lbs udon noodles
- 1½ c coconut milk
- 2½ c broth
- 2 stalks lemongrass
- 3–4 makrut lime leaves OR ¼ t lime zest
- 8 oz fresh mushrooms, chopped
- 3–4 Thai chilis (or sriracha)
- ¼ t salt
- ¼ c lime juice
- ⅓ c thin coins of fresh galangal
Notes
- Freeze into individual portions before adding noodles. Save for winter when you're sick — the coconut milk and ginger are amazing for recovery.
