Quick & Healthy Ramen Bowl

Ingredients
- 4 T oil, divided
- 8 oz shiitake mushrooms, stems removed and caps sliced
- Salt, to taste
- 1 medium onion, diced
- 1-in piece fresh ginger, peeled and minced
- 5 medium cloves garlic, minced
- 3 qt gelatinous chicken stock
- 1 cup kimchi, chopped
- 6 tablespoons kimchi liquid
- 2 T miso paste
- 2 T soy sauce
- 4 servings ramen noodles
- 4 soft-boiled eggs, halved, for serving
- 2 scallions, white and light green parts only, very thinly sliced
- Nori (Japanese seaweed sheets), for serving
- Watercress or other tender leafy green, for serving
