Quick & Healthy Ramen Bowl

Ingredients

  • 4 T oil, divided
  • 8 oz shiitake mushrooms, stems removed and caps sliced
  • Salt, to taste
  • 1 medium onion, diced
  • 1-in piece fresh ginger, peeled and minced
  • 5 medium cloves garlic, minced
  • 3 qt gelatinous chicken stock
  • 1 cup kimchi, chopped
  • 6 tablespoons kimchi liquid
  • 2 T miso paste
  • 2 T soy sauce
  • 4 servings ramen noodles
  • 4 soft-boiled eggs, halved, for serving
  • 2 scallions, white and light green parts only, very thinly sliced
  • Nori (Japanese seaweed sheets), for serving
  • Watercress or other tender leafy green, for serving
