Mushroom and Chard Pasta

Ingredients

  • 4 T olive oil
  • 4 cloves garlic, minced
  • 6 sprigs thyme
  • 1 lb mushrooms
  • 4 T butter
  • 1 lb Swiss chard
  • ½ t sea salt
  • 2 t soy sauce
  • ½ c heavy cream
  • ¼ t nutmeg
  • Heavy pinch of black pepper
  • ¼ t lemon zest
  • 1 lemon, juiced
  • 1 pkg pasta
  • ¼ c parmesan cheese, shaved or grated

Directions

  1. Heat olive oil in a large sauce pan or skillet. Once it's hot, add the minced garlic and thyme sprigs and sauté for 30 seconds.
  2. Cook the pasta noodles according to package directions.
  3. Add the mushrooms and sprinkle with the salt. Cook for two minutes.
  4. When mushrooms are starting to soften, add the butter to the pan and cook for another minute.
  5. As the mushrooms are cooking, thinly slice the chard stalks and roughly chop the leafy tops.
  6. Add the stalk slices to the mushrooms. Stir, then put on the lid and allow to simmer for five minutes.
  7. Add the chopped leaves along with the lid back on the pan and cook for four more minutes.
  8. Add the cream, nutmeg, lemon zest, and pepper to the pan. Stir and let it cook with the lid on for a couple of minutes.
  9. Turn off the heat, check for seasoning and add more spices to taste.
