Mushroom and Chard Pasta

Ingredients
- 4 T olive oil
- 4 cloves garlic, minced
- 6 sprigs thyme
- 1 lb mushrooms
- 4 T butter
- 1 lb Swiss chard
- ½ t sea salt
- 2 t soy sauce
- ½ c heavy cream
- ¼ t nutmeg
- Heavy pinch of black pepper
- ¼ t lemon zest
- 1 lemon, juiced
- 1 pkg pasta
- ¼ c parmesan cheese, shaved or grated
Directions
- Heat olive oil in a large sauce pan or skillet. Once it's hot, add the minced garlic and thyme sprigs and sauté for 30 seconds.
- Cook the pasta noodles according to package directions.
- Add the mushrooms and sprinkle with the salt. Cook for two minutes.
- When mushrooms are starting to soften, add the butter to the pan and cook for another minute.
- As the mushrooms are cooking, thinly slice the chard stalks and roughly chop the leafy tops.
- Add the stalk slices to the mushrooms. Stir, then put on the lid and allow to simmer for five minutes.
- Add the chopped leaves along with the lid back on the pan and cook for four more minutes.
- Add the cream, nutmeg, lemon zest, and pepper to the pan. Stir and let it cook with the lid on for a couple of minutes.
- Turn off the heat, check for seasoning and add more spices to taste.
